They called it a coffee cake.. Why? Because people eat this cake while drinking coffee.. The cake has no coffee in it, whatsoever.. Funny isn’t it?

Cinnamon Crumbly Cupcake

Well i called it simply cinnamon crumbly cupcake..
Because its a cinnamon cake in a cup with crumbles and sugar glazed on top.. Super delicious….. If you are not a coffee lover, you can still have this cupcake with milk, tea or even just a mineral water.. Haha!!

Sugar Glazed

The cake is moist.. The crumble on top is crunchy.. The sugar glazed is sweet and lickable… Love this cake a lot!!

You can make it in a cup, or in a loaf pan and cut them in squares..
And please spare some for your friends and families.. Don’t eat them all… 😉

Ready to bake

Bahan cinnamon cupcake :
185gr tepung terigu
100gr Brown Sugar
2 sdt baking powder
1 sdt kayumanis
1/4 sdt baking soda
1/4 sdt garam
180ml susu
80ml minyak (saya pakai minyak untuk memasak)
2 telur

Bahan crumb topping :
65gr Gula putih
65gr Brown Sugar
1 sdt kayu manis bubuj
1/4 sdt garam
113gr unsalted butter, lelehkan
185gr tepung terigu

Bahan sugar glaze
30gr tepung gula
1 sdt susu, gunakan sedikit2

Cinnamon Crumb

Cara membuat

Panaskan oven hingga 180 C. Siapkan loyang cupcake alasi dengan mangkok cupcake

Buat topping crumb-nya, campur gula putih dan brown sugar, kayumanis, dan garam di mangkok. Tambahkan lelehan butter, aduk rata, tambahkan tepung dan aduk kembali hingga lembut. Sebarkan adonan crumb diatas kertas roti dan angin2kan hingga kering.

Cinnamon Crumb

Di mangkuk besar, aduk tepung, gula, baking powder, kayumanis, baking soda, dan garam.

Di mangkuk lain, aduk susu, minyak, dan telur.

Campurkan adonan susu ke adonan tepung, dan aduk menggunakan spatula hingga rata.

Tuang adonan cake ke loyang cupcake menggunakan sendok ice cream (untuk mempermudah, bila tidak ada gunakan sendok sayur).

Taburi atasnya dengan adonan crumb, tekan adonan crumb perlahan ke adonan kue agar menempel.

Panggang selama 15-17 menit, hingga matang. Uji dengan mencolok tusuk gigi di cupcake, apabila tidak ada adonan yg menempel berarti cupcake sdh matang.

Untuk membuat sugar glaze, campurkan tepung gula dan suu. Aduk rata. Apabila terlalu encer tambahkan tepung gula sedikit2, apabila terlalu kental tambahkan susu sedikit2.

Setelah cupcake matang, diamkan 10 menit agar dingin, lalu tuangkan sugar glaze diatas cupcake.

Hidangkan setelah sugar glazed mengeras.
